These waffles are perfect following a workout and freeze well. I really like topping them with with several sliced bananas and just a little creamy peanut butter so it melted in to the waffle storage compartments. Mmmm nothing at all beats breakfast for dinner.

Ingredients

2 teaspoons cinnamon

pinch of nutmeg

2 ripe large bananas, mashed (about 3/4 cup)

4 egg whites, lightly beaten

1 tablespoon vanilla extract (gluten free, if desired)

2 cup unsweetened vanilla almond milk

1/2 cup mini delicious chocolate chips, if desired

Instructions

Preheat waffle iron and spray with nonstick food preparation spray. In a big bowl, whisk together quinoa flour, cinnamon, nutmeg, and baking powder; set aside.

In another large bowl, combine banana, egg whites, vanilla extract, and almond milk until well combined. Blend in dry ingredients until well mixed. Fold in chocolate chips if preferred.

Spoon batter into waffle iron and make until steam halts and waffles are golden dark brown and slightly crispy externally. Repeat with staying batter. Dishes makes about 8 Belgian waffles.

If you don’t have quinoa flour available, you can test and use whole wheat pastry flour or white whole wheat flour, although then they wouldn’t be gluten free.

Instead of almond milk feel free to use coconut or regular dairy.

If you don’t use chocolate potato chips, each waffle is only 163 calories.

I’m obsesssssed with quinoa flour. It’s so light and airy, unlike most GF flours. I could imagine it creates an unbelievable batch of waffles, especially challenging light substances you used.
